Project Description
The Trasimeno Fisherman’s Cooperative has been practicing professional sustainable fishing
on Lake Trasimeno since 1923. Every day they deliver their catch to the local processing plants
where it gets cleaned and packaged for sale either as fresh catch, in long term preservation
wrapping, marinated or smoked. It is how it ends up at the Locanda dei Pescatori del Trasimeno
where it is brought directly, cooked following ages-old traditional recipes and served. It is the
first of its kind on internal water bodies to create this type of eatery.
