Glorious bread and pasta, flour and… hand kneading

They sell directly to the public and even bake and knead special requests for visitors, the artisanal bakers and pasta makers put passion and devotion into their daily work.

Fresh pasta is made by hand, and only by hand. It is a product steeped in knowhow that has been passed down over generations. Still today we can enjoy tagliatelle, pappardelle, maltagliati, gnocchi, pasta ripiena, pici – or umbricelli – made using traditional methods and recipes, and others that are variations on themes that feature carefully designed fresh new flavours.

Traditional bread is made using a pasta madre (starter dough) and whole grain type 1 flour. There are a variety of traditional bakers in the area between Sant’Arcangelo and Castiglione del Lago, for example.

The flour used is milled locally at a cutting edge mill that has been in the business for more than seventy years and produces high quality flour to industry professionals and private clients. Theirs is an eco-sustainable operation.
